Millionaire Cupcakes

 I have always loved Millionaire Shortbread, but to be honest my attempts at making it have been pretty terrible! So I decided to make my own version; a Millionaire Cupcake! The cake consists of a vanilla and fudge sponge and chocolate icing.
 

Ingredients:
150g Margarine
100g Caster Sugar
50g Soft Brown Sugar
175g S.F. Flour
1tsp Baking Powder
1tsp Vanilla Essence
3 Eggs
1tlbs Milk
75-100g Fudge Pieces

Icing:
250g Chocolate
125ml Double Cream
 
Method:
Measure out all your ingredients and pre-heat the oven to 180'c.
 
As with the plain sponge cupcakes all the ingredients for this recipe (apart from the fudge pieces) can be added into a mixing bowl and mixed either with an electric whisk or by hand. Be careful not to over-whisk the mixture as this can cause the cakes to be dry. 
 
Once all the ingredients are mixed together, pour in the fudge pieces and mix with a spatula or metal spoon.
 
Spoon out the mixture into cupcake cases and place in the oven for approximately 15 minutes.

Whilst the cakes are in the oven you can start to make the chocolate icing.
 
Simply add the chocolate (broken up into pieces) and the cream into a glass/heat proof bowl. Half fill a saucepan with water and bring to the boil, then turn the heat down so the water is simmering and place the bowl over the pan (ensuring the water does not touch the bottom of the bowl).
 
Stir the mixture occasionally as the chocolate starts to melt. Once the mixture is combined take it off the heat and leave it to cool in the fridge.

When the cakes are ready (golden brown), remove them from the oven and place them onto a wire cooling rack.
 
Once the cakes have cooled, check the chocolate icing  - which should be firm but easy to spread with a knife.
 
Then you can either pipe the icing onto the cakes or just spread it on using a knife. To finish the cakes decorate with white chocolate curls or extra fudge pieces.
